Roasted Red Pepper Soup topped with Parmesan Cheese and served with

Grilled Chicken, Spinach, and Cheese Quesadillas Grilled, marinated,
boneless Chicken Breast, fresh Spinach, and Monterey Jack Cheese
Quesadillas served with Black Beans, Salsa, and Spanish Rice.
Grilled Mahi-Mahi with Mole Verde Marinated fillet of Mahi-Mahi with
a Green Mole Sauce made from Roasted Pumpkin Seeds, Tomatillos,
Cilantro, Onions, Jalapenos, Garlic, and Herbs. Served with sauteed
Zucchini, yellow Squash and Red Chili Rice Pilaf.
Jamaican Jerk Roasted Pork Loin Boneless Pork Loin marinated in
Jamaican Spices, sliced and served with Curried Rice Pilaf and
Garlic Sauteed Green Beans.
Louisiana Pecan Crusted Breast of Chicken with Creole Mustard Sauce,
Herbed Rice Pilaf and French Bread.
